Recipe for Vada Pav
Ingredients:
- 4 medium-sized potatoes, boiled and mashed
- 1 cup gram flour (besan)
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- 1/2 tsp cumin powder
- Salt to taste
- Oil for frying
- Green chutney
- Garlic chutney
- 4 pav (Indian bread rolls)
For the batter:
1. In a bowl, mix gram flour, turmeric powder, red chili powder, cumin powder, and salt.
2. Add water gradually to make a smooth batter. It should be thick enough to coat the potato balls.
For the potato filling:
1. In a separate bowl, mix the mashed potatoes with salt and some red chili powder.
2. Divide the mixture into small lemon-sized balls and flatten them slightly to form patties.
To make Vada Pav:
1. Heat oil in a deep pan for frying.
2. Dip each potato patty in the prepared gram flour batter, ensuring it is coated evenly.
3. Carefully drop the coated patty into the hot oil and fry until golden brown and crisp.
4. Drain on paper towels to remove excess oil.
To assemble Vada Pav:
1. Slit the pav horizontally without cutting all the way through.
2. Spread some green chutney and garlic chutney on the inside of the pav.
3. Place a hot vada (potato patty) in between and press gently.
4. Serve hot with more chutney on the side.
