Recipe for Samosas

Ingredients:
For the dough:
- 2 cups all-purpose flour
- 1/4 cup vegetable oil
- 1/2 tsp salt
- Water, as needed

For the filling:
- 2 medium potatoes, boiled and mashed
- 1/2 cup green peas, boiled
- 1 small onion, finely chopped
- 1 green chili, finely chopped
- 1 tsp ginger-garlic paste
- 1/2 tsp cumin seeds
- 1/2 tsp coriander powder
- 1/2 tsp garam masala
- 1/4 tsp turmeric powder
- Salt to taste
- Fresh coriander leaves, chopped
- Oil for frying

For assembling and frying:
- All-purpose flour paste (made by mixing 2 tbsp flour with water)
- Oil for deep frying

Instructions:
1. Start by making the dough. In a large mixing bowl, combine the all-purpose flour, salt, and vegetable oil. Mix well until the mixture resembles breadcrumbs.
2. Gradually add water and knead to form a smooth and firm dough. Cover with a damp cloth and let it rest for at least 30 minutes.
3. Meanwhile, prepare the filling. Heat oil in a pan and add cumin seeds. Once they splutter, add chopped onions and sauté until translucent.
4. Add green chili, ginger-garlic paste, and cook for a minute. Then add turmeric powder, coriander powder, garam masala, and salt.
5. Add mashed potatoes, boiled peas, and chopped coriander leaves. Mix well and cook for a few minutes. Remove from heat and let the filling cool down.
6. Divide the rested dough into equal-sized balls and roll each ball into a small circle.
7. Cut each circle in half to form two semi-circles. Take one semi-circle and fold it into a cone shape, sealing the edges with the flour paste.
8. Fill the cone with the prepared potato filling and seal the open end using the flour paste.
9. Repeat the same process for all the samosas.
10. Heat oil in a deep pan for frying. Once hot, gently slide in the prepared samosas in batches.
11. Fry on medium heat until they turn golden brown and crispy. Remove from oil and drain on paper towels.
12. Serve hot with mint chutney or tamarind chutney.
