- 1/2 cup thick yogurt
- 1 tbsp ginger-garlic paste
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- Salt to taste
- 1 tbsp lemon juice
- 2 tbsp oil
For the vegetable marinade:
- 1 bell pepper, cut into chunks
- 1 onion, cut into chunks
- Cherry tomatoes (optional)
- Wooden skewers, soaked in water
For garnish:
- Fresh coriander leaves, chopped
- Lemon wedges
Instructions:
1. In a mixing bowl, combine yogurt, ginger-garlic paste, turmeric powder, red chili powder, cumin powder, coriander powder, garam masala, salt, lemon juice, and oil. Mix well to form a smooth marinade.
2. Add the paneer cubes to the marinade and coat them well. Cover and refrigerate for at least 1 hour to let the flavors infuse.
3. In another bowl, combine the bell pepper and onion chunks with a little bit of the same marinade. Toss to coat the vegetables evenly.
4. Preheat the grill or oven to medium-high heat.
5. Thread the marinated paneer cubes, bell pepper, onion, and cherry tomatoes onto the soaked skewers in an alternating pattern.
6. Place the skewers on the grill or in the oven and cook for about 10-15 minutes, turning occasionally until the paneer is golden brown and the vegetables are charred at the edges.
7. Once cooked, remove the skewers from the heat and garnish with chopped coriander leaves and lemon wedges.
8. Serve hot with mint chutney, tamarind chutney, or a side of naan bread.
