Amritsari Chole Kulche

Chole Kulche is a popular street food in North India, especially in Delhi and Punjab. It consists of spicy chickpea curry (chole) served with soft and fluffy bread (kulche). Here's a simple recipe to make Chole Kulche at home:

Chole (Chickpea Curry):
Ingredients:
- 2 cups chickpeas, soaked overnight
- 2 onions, finely chopped
- 2 tomatoes, pureed
- 1 inch ginger, grated
- 4-5 garlic cloves, minced
- 1 green chili, chopped
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tbsp red chili powder
- 1 tbsp coriander powder
- 1 tsp garam masala
- Salt to taste
- Fresh coriander leaves for garnish
- Oil for cooking

Instructions:
1. Pressure cook the soaked chickpeas with salt until they are soft and cooked.
2. In a pan, heat oil and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
3. Add ginger, garlic, and green chili and sauté for a minute.
4. Add tomato puree and cook until the oil separates.
5. Add turmeric powder, red chili powder, coriander powder, and garam masala. Mix well.
6. Add the cooked chickpeas along with some water if needed. Simmer for 10-15 minutes.
7. Garnish with fresh coriander leaves.

Kulche (Soft Bread):
Ingredients:
- 2 cups all-purpose flour
- 1 tsp baking powder
- Salt to taste
- 1/2 cup yogurt
- Water as needed
- Butter for brushing

Instructions:
1. In a bowl, mix all-purpose flour, baking powder, and salt.
2. Add yogurt and knead into a soft dough. Add water as needed.
3. Cover the dough and let it rest for 2 hours.
4. Divide the dough into equal portions and roll them into balls.
5. Roll out each ball into a flatbread shape.
6. Heat a tawa or griddle and cook the kulche on both sides until golden brown spots appear.
7. Brush with butter.

Serve the hot Chole with warm Kulche and enjoy this delicious street food at home!
